Doreen’s Spinach Tortilla

Free on Both Days


300g Frozen or fresh spinach

3 eggs

100g cottage cheese

50g green pepper

50g chopped onion

3 drops Tabasco sauce


Microwave spinach for 2 1/2 minutes

if frozen and drain

Sweat fresh spinach in frying pan.

Combine all ingredients in a bowl and mix  well.  Place in an ovenproof dish and bake in oven at 180oC for 20 minutes or until firm to touch.


Tzatziki Dip

(Free on Both Plans)

(This greek recipe is creamy yet sharp and although usually served as a dip, it also works well (if not better) as a topping for lamb or quorn steaks)


150g pot Quark

2 cloves garlic, crushed

A pinch of paprika, 1 tsp cumin

A squeeze of lemon juice

A pinch of cayenne pepper

1/2 cucumber, diced

2 tbsp freshly chopped mint

Salt & freshly ground black pepper


Place the Quark in a small bowl.  Add the garlic, paprika, cumin, lemon juice, cayenne pepper, cucumber and freshly chopped mint and stir to combine.

Season to taste with salt & pepper,

cover and chill until required.
